Year after year, ice cream remains the most popular treat of the summer season. For enthusiastic cooks, the refreshing sweet is an inexhaustible source of inspiration, because it can be used to make a variety of desserts – with fruits and berries, chocolate and caramel, waffles and cookies, coconut shavings and nuts.

Ice cream sandwich with strawberry sauce
What you’ll need:
- Any pre-made ice cream (600 grams)
- Sifted flour (300 grams)
- Egg (1 small egg)
- Butter (120 grams)
- Sugar (100 grams + filling to taste)
- Fresh strawberries (150 grams)
- Starch and fine gelatin (half a teaspoon each).
Cooking Process:
- Rub softened butter with sugar. Add the egg, lightly beaten with a fork, and then the sifted flour.
- Form the dough into two balls of equal size. Wrap each in clingfilm and keep in the refrigerator for half an hour.
- Roll out one of the portions of dough into a layer half a centimeter thick. Cut out a square or round (you can also cut it into equal triangles), then place the pieces on a parchment-lined baking sheet or silicone mat.
- Do the same manipulation with the second part of the flour base. Bake the cookies for 10-15 minutes at 190 degrees.
- Mashed potato the berries into a purée. Separate three spoonfuls of strawberry mixture, mix with finely granulated gelatin and leave for five minutes.
- Place the rest of the mashed berries in a saucepan together with the starch. Add sugar to taste, and heat over medium heat until it almost comes to a boil – you need to let the starch disperse. Stir all the time.
- Remove the bowl from the burner. Stir in the swollen gelatin, stir everything thoroughly and then cool to room temperature.
- Put the ice cream in a container. Leave it to thaw for a while, then pour the berry sauce over it. Stir the treat lightly to create beautiful strawberry spreads.
- Finally, you can form sandwiches: clamp the ice cream portions with cookies on both sides. Refrigerate lightly before serving.
Coffee dessert
What you will need:
- Whipping cream (1 cup)
- Ice cream or cream ice cream (600 grams)
- Cooled espresso (half cup)
- Powdered sugar (3 tablespoons)
- Cinnamon (half teaspoon)
- Dark chocolate (half a bar).
Cooking Process:
- Crumble the chocolate on a coarse grater.
- Vigorously whisk the ice cream with a blender.
- Add coffee to the ice cream and beat again. Transfer the mass to a container, and send it to the freezer until solidified.
- Sprinkle the cream over the spice and powdered sugar. Whisk until a lush firm froth forms.
- Spread the coffee ice cream into creamsicles. Garnish each serving with a cap of whipped cream and sprinkle with chocolate shavings.
An unusual treat with coconut.
What you’ll need:
- Pitted cherries (180 grams)
- Lime (1 fruit)
- Coconut shavings (30 grams)
- Drinking water (quarter cup)
- Bounty chocolates (5 pieces)
- Vanilla-flavored ice cream (half a kilogram)
- Sugar (incomplete tablespoon).
Cooking Process:
- Spread the coconut shavings over a parchment-lined baking tray – you should get a thin, even layer. Load into an oven preheated to 160 degrees, dry for three to four minutes until golden.
- Slice 3 chocolate bars into small slices. Combine with the ruddy chips and ice cream and mix thoroughly.
- Tuck the sweet mass into dessert molds. Cover with clingfilm and chill in the freezer overnight.
- Pour the water into a saucepan. Add the granulated sugar, a handful of lime zest, and the juice squeezed from a quart of citrus.
- Place the container on the stove. Bring the contents to a boil, pour in the rinsed berries and cover the saucepan with a lid. Boil the syrup with the cherries for five minutes, then cool it down and put it in the fridge.
- The next day you can proceed to decorate the dessert. Take the ice cream out of the moulds, put it in nice bowls and pour the sauce with the berries. Slices of leftover Bounty will serve as additional decoration.
Cold dessert with peach and raspberries
What you will need:
- Raspberry syrup (1 tablespoon)
- Ice cream in a crispy waffle cup (1)
- Lemon juice (1 teaspoon)
- Fresh raspberries (1 tablespoon)
- Crumbled cookies (to taste)
- Peach (1 peach)
- Mint leaves (for decoration).
Cooking Process:
- Wash and peel the peach. Crush into small cubes.
- Separate the waffle from the ice cream. Chop it with a knife or break it up with your hands and put it in the bottom of the muffin tin.
- Place the peach slices on top. Drizzle with freshly squeezed citrus juice.
- Cut the ice cream into slices. Place on top of the fruit slices.
- Next layer is raspberry. Pour the syrup over the ice cream and scatter the fresh berries over it.
- Top the dessert with crumbled cookies and garnish with mint leaves. Serve without delay.
Chocolate and banana dessert
What you will need:
- Milk chocolate (half a bar)
- Cookies like Jubilee (5 pieces)
- Banana (1 large fruit)
- Unsalted butter (1 teaspoon)
- Ice cream (200 grams).
Cooking Process:
- Break half of the chocolate bar into cubes. Place in a bowl, place in a water bath and melt completely.
- Peel the banana. Slice into circles about an inch thick, lightly brown both sides in butter.
- Crush the cookies to a crumbly consistency. Toast them in a hot, dry frying pan.
- Arrange the banana slices in a cremation dish. Fill with liquid chocolate, sprinkle with cookie crumbs and “cover” with slightly thawed ice cream. Garnish the dessert with any chopped nuts, if desired.
